Salted Toffee Brownie Paleo Chocolate Doughnuts


Valentine’s Day  is coming quickly, and I love any excuse to eat chocolate! That was pretty much the extent of rationalization that I needed to make these doughnuts.

I also just bought myself some water chestnut flour, and I have to say that when it comes to egg-free paleo baking, water chestnut flour is a breakthrough!! Pick some up; I’ll definitely be doing more recipes with it!

Salted Toffee Brownie Paleo Chocolate Doughnuts

These doughnuts taste like a cross between cake and brownies, and the salted toffee topping is pretty much the world.  These didn’t last a day in our house!

Salted Toffee Brownie Paleo Chocolate Doughnuts

Ingredients
  • Doughnuts:
  • 3 green-tipped bananas
  • 1/2 cup butter or [url href=”http://www.amazon.com/gp/product/B00B3COTYM/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00B3COTYM&linkCode=as2&tag=coituppa-20&linkId=RZG5MILDKAOCMYO5″ target=”_blank” rel=”nofollow”]coconut oil[/url], melted
  • 1/3 cup [url href=”http://www.amazon.com/gp/product/B001HTJ2BQ/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B001HTJ2BQ&linkCode=as2&tag=coituppa-20&linkId=V2EUYJR4GX4X37J2″ target=”_blank” rel=”nofollow”]coconut milk[/url]

  • 3 tablespoons coconut flour (I only recommend [url href=”http://www.amazon.com/gp/product/B000KENKZ8/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B000KENKZ8&linkCode=as2&tag=coituppa-20&linkId=X47OKRPIAFWVFNRG” target=”_blank” rel=”nofollow”]Bob’s[/url] and [url href=”http://www.amazon.com/gp/product/B00BSZBEAG/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00BSZBEAG&linkCode=as2&tag=coituppa-20&linkId=KQN2TAGGY5PLZVKY” target=”_blank”]Anthony’s[/url])
  • 1 teaspoon baking soda
  • 1 teaspoon apple cider vinegar
  • Toffee:
  • 1/2 cup [url href=”http://www.amazon.com/gp/product/B009324C0U/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B009324C0U&linkCode=as2&tag=coituppa-20&linkId=6RT2X4IQA6LUWQQY” target=”_blank” rel=”nofollow”]coconut sugar[/url]
  • 2 tablespoons butter
  • Sea salt
Instructions
Doughnuts:
  1. Preheat the oven to 350° F and grease a doughnut pan.
  2. Mash the bananas and mix in the butter, coconut milk, maple syrup, and cocoa powder.
  3. Add the water chestnut flour, coconut four, baking soda, and apple cider vinegar and mix well.
  4. Scoop into 7 doughnut “cups.”
  5. Bake for about 20 minutes.
Toffee:
  1. Melt the butter in a saucepan over medium heat and add the coconut sugar.
  2. Cook and stir until melted and caramel-like.
  3. Quickly drizzle over doughnuts.
  4. Sprinkle with a little sea salt.
  5. Allow the toffee to harden before eating.

    Is it to remplace water chesnuts by an other kind of flour (almond flour or coconut flour)?

    The recipe states “2/3 cup water chestnut flour” – How much water? And how much chestnut flour?
