So it’s been like super warm here (in the 40’s!) and spring produce is going on sale already! As a result, we had some fresh asparagus to use, and here is what we came up with!
Paleo Frittata

Ingredients
- eggs – 6
- dried rosemary – to taste
- Black pepper – to taste
- garlic powder – 1/4 teaspoon
- asparagus – small handful, chopped
- mushrooms – 6, sliced
- onions – 1/2 cup chopped
- black olives – 1/4 cup sliced
- olive oil – for cooking
Instructions
- Whisk the eggs with the rosemary, pepper and garlic powder and set aside. In a medium skillet, heat some olive oil over medium heat. Add the chopped veggies and saute until crisp-tender. Add a dash more oil and use a spatula or spoon to distribute the veggies evenly over the pan. Turn the heat down to medium-low and pour in the eggs. Cover and allow to cook until completely set.
