Strawberry Spinach Salad

A delicious and easy salad!

Strawberry Spinach Salad

Serves: 4 servings
Ingredients
  • fresh baby spinach – 6 cups
  • fresh strawberries – 1 cup sliced
  • onion – 1/2 cup diced
  • Dressing:
  • extra-virgin olive oil – 1 cup
  • balsamic vinegar – 1/2 cup
  • Dijon mustard – 1 teaspoon
Instructions
  1. Toss together the spinach, strawberries and onion in a large bowl. Whisk together the olive oil, balsamic vinegar, and Dijon. Drizzle over the salad to taste. You’ll have a good bit leftover dressing; stick it in your fridge to try on other salads throughout the week!

    Love this idea — strawberries and spinach go so well together! A great alternative for those days a regular ‘ol salad just won’t do 🙂
