Happy Easter everyone! I had some free time this afternoon and felt like baking; so I whipped these up! I am not that good at baking, but these turned out remarkably well! They are light and sweet and perfect for an Easter party or just an early spring treat. Hope you enjoy them!
Strawberry Thumbprint Paleo Macaroons

Ingredients
- egg whites – 2
- raw honey – 3 tablespoons
- pure vanilla extract – 1 teaspoons
- salt – dash
- unsweetened coconut flakes – 1 cup
- strawberry preserves – for filling
Instructions
- Beat the egg whites with an electric hand mixer until stiff. 2. Beat in the honey, vanilla and salt. 3. Fold in the coconut. 4. Grease a cookie sheet with some coconut oil. 5. Drop the cookies on the baking sheet and use a spoon to make a little well in the center of each one. 6. Place 1/2 to 1 teaspoon strawberry preserves in the center of each cookie. 7. Bake at 375 degrees F for 10 to 12 minutes.
