Paleo Sweet Potato Salad

Delicious sweet potato salad; perfect with any meat!


 

Sweet Potato Salad

Serves: 4 servings
Ingredients
  • sweet potatoes – 2 large, peeled and cubed
  • apple – 1/2, diced
  • celery – 1 rib, chopped
  • fresh parsley – 2 tablespoons chopped
  • onion – 1 large, sliced
  • bacon – 2 strips, diced
  • olive oil – 1/4 cup
  • balsamic vinegar – 2 tablespoons
  • garlic – 3 cloves, minced
  • Dijon mustard – 1 teaspoon
  • Italian seasoning – 1 teaspoon
  • salt – to taste
  • black pepper – to taste
Instructions
  1. Boil sweet potatoes until tender and drain. Place in salad bowl and set aside. In a medium skillet, saute the onion with the bacon in 1 couple Tbsp.s olive oil until onions are somewhat caramelized and bacon is cooked. Set aside. In a small bowl, whisk together 1/2 C. olive oil, balsamic, garlic, dijon, Italian seasoning, salt and pepper. Toss the sweet potatoes with the onions and bacon mixture, apple, celery and parsley. Pour the dressing over and toss to coat. Serve immedietly or chill until serving.

    We served this for dinner tonight and all really liked it. We used a medium sized onion and steamed the sweet potatoes, otherwise we made it as written. We served it with Mickey Trescott’s grilled, herbed beef patties from her AIP cookbook, a green salad, oven roasted cauliflower and organic cherries. Delicious! Thank you for the tasty recipe.
