I want to thank the wonderful ladies over at Pure7 chocolate for sending me some of their amazing chocolate for me to review! I don’t think it’s a secret that I love chocolate, so getting to review such a high quality one is an honor!
Why do I love Pure7 chocolate so much? It’s a small Massachusetts-based company started my two chocolate-loving moms, and their chocolate is raw, organic, and sweetened only with honey, not sugar. I also love that there’s no soy lecithin or other yucky stuff.
Pure7 chocolate is also fair-trade, which makes me so happy because so many of the big chocolate companies have such questionable sourcing.
Ok, so how does this stuff taste?? Didn’t take me long to find out…
As you can see in the picture, Pure7 chocolate has a rich, slightly fudgy texture with no plastic-y-ness. I has the 80% cacao bar, and it was a bit sweet but not too sweet. My favorite kind of eating chocolate. I really feel like the taste of the chocolate is so amazing because of the quality of the cocoa that they use.
My little sister Julia said it best: “{Eating this chocolate} is like that pure gold moment when you realize that the people that think you’re missing so much eating paleo – they don’t know what they’re missing!”
Of course the next test was to bake with this chocolate! I had some leftover homemade tahini and was craving chocolate chip cookies, so I chopped the chocolate up and made tahini chocolate chip cookies!
The hardest part of baking with Pure7 chocolate is not eating all the chocolate before it goes into the batter! The chocolate worked perfectly in the cookies despite these bars’ lack of fillers and binders. Real food for the win!
These cookies are super good and I love that I didn’t have to use egg whites; that means my dad can eat these! Tahini can be pretty bitter but it is very mellow in this recipe. I love that these cookies are soft and chewy on the inside and just a little crispy on the outside; delicious!
I’ll definitely be trying more Pure7 chocolate; the next flavors I’d like to try are the 100% dark and the espresso bar!! You can see all their yummy flavors here.

- 2 egg yolks
- 1/3 cup [url href=”http://www.amazon.com/gp/product/B005P0LW66/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B005P0LW66&linkCode=as2&tag=coituppa-20&linkId=5RI3OIH43RYZ7BCM” target=”_blank”]maple syrup[/url]
- 2 tablespoons[url href=”http://www.amazon.com/gp/product/B000KENKZ8/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B000KENKZ8&linkCode=as2&tag=coituppa-20&linkId=NHOUIIUWSSH5MP7Y” target=”_blank”]coconut flour[/url]
- 1/2 teaspoon [url href=”http://www.amazon.com/gp/product/B000BD0SDU/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B000BD0SDU&linkCode=as2&tag=coituppa-20&linkId=WTNUZ6TA7UPUXFKY” target=”_blank”]salt[/url]
- 1/4 teaspoon baking soda
- 2 bars [url href=”http://www.amazon.com/gp/product/B00R216Y6Y/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00R216Y6Y&linkCode=as2&tag=coituppa-20&linkId=YAXNP3PLTCENBPJF” target=”_blank”]Pure7 80% dark chocolate[/url], chopped
- Preheat oven to 350 degrees Fahrenheit. Grease a baking sheet with a little coconut oil.
- In a mixing bowl, stir together the tahini, egg yolks, and maple syrup.
- Add the coconut flour, salt, and baking soda. Mix well.
- Mix in the chocolate.
- Drop my tablespoonfuls on to the baking sheet.
- Bake for 10-15 minutes.

I made these tonight – added some cinnamon and coconut flakes. Super delicious. Love how they rise!

These were delicious! I found them a little bit heavy on the salt, so next time I make them (which I will for next week’s Christmas cookie swap party!) I’ll probably only add 1/8 tsp salt. I also didn’t have as much chocolate as the recipe called for… I probably used about 1 oz total. The recipe made about 18 adorable, puffy cookies about 1.5″ in diameter.

YUM these look delicious! I used tahini in a sweet recipe for the first time a few weeks ago (in a home-made protein bar) and I was so surprised at how well the flavors work. Can’t wait to give these cookies a try!
