Chocolate chip cookie bars are my childhood in a cookie.  My mother used to make these deliciously amazing non-paleo blond brownies.  They were so chewy and sweet and awesome.  She would make them for every party and picnic.

Now that we’re paleo, I sometimes crave her amazing cookie bars.  What can I do? Get in the kitchen!

I’m slightly obsessed with Organic Gemini tigernut flour.  I love it not only because it’s super healthy (full or resistant starch), but because the fiber in it acts as a binder in recipes, resulting baked goods with a really nice texture.

These soft and chewy tigernut flour bars take just a few minutes to whip up and only require one bowl! They remind me of my childhood while being full of nutrient-dense ingredients.  Yum!

Tigernut Flour Chocolate Chip Cookies Bars

Serves: 9-12 bars
Ingredients

  • 1/2 cup [url href=”http://www.amazon.com/gp/product/B009324C0U/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B009324C0U&linkCode=as2&tag=coituppa-20&linkId=R6R2NBRHB3HSDVEB” target=”_blank”]coconut sugar[/url]
  • 2 eggs
  • 1-1/4 cup [url href=”http://bit.ly/1QcmIiM” target=”_blank”]tigernut flour[/url]
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon [url href=”http://www.amazon.com/gp/product/B000BD0SDU/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B000BD0SDU&linkCode=as2&tag=coituppa-20&linkId=RHTJODQVGOMLZBQF” target=”_blank”]salt[/url]
  • 3.5 ounces [url href=”http://www.amazon.com/gp/product/B004WZ4CLW/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B004WZ4CLW&linkCode=as2&tag=coituppa-20&linkId=6ENZ3GFZ27RJSZPX” target=”_blank”]dark chocolate[/url], chopped (or dark chocolate chips)
Instructions
  1. Preheat oven to 350° F.
  2. Grease an 8 inch by 8 inch glass baking dish with a little butter.
  3. In a mixing bowl, cream together the butter and coconut sugar
  4. Mix in the eggs
  5. Stir in the tigernut flour, baking soda, and salt.
  6. Fold in dark chocolate.
  7. Transfer to baking dish.
  8. Bake for 20-25 minutes.

    Very similar to a brownie recipe I make, except I see that your recipe doesn’t use any vanilla. Do you ever add any to these?

    Yum! Thanks for this recipe. My first Tigernut flour recipe and the first I saw without some other flour or starch added to it. Still looking for a pancake recipe with Tigernut as the only flour/starch. Hoping this flour sits well with me.

    I have a lot of blanched almond flour and would like to use it. Any good recipes?

      I do a lot of nut-free recipes, but I do have a crusty bread recipe and a couple of cookie recipes that use almond flour. Also check out elanaspantry.com; she has a whole cookbook for almond flour! 🙂
