Warm Buttered Kelp Noodles and Vegetables

Warm Buttered Kelp Noodles and Vegetables | Cook It Up Paleo


I must share with you my latest successful creation, Warm Buttered Noodles with veggies. I decided to experiment one day at lunch and quite fell in love with the results! Mom was quite skeptical when she saw me adding nutmeg, but the moment she tasted it she was won over. Seriously, a pinch of nutmeg added to your favorite vegetable, noodle, chicken or egg dishes dishes is quite frankly amazing. Speaking of chicken, adding some chopped up to this would make for a hearty main dish. Enjoy!

Warm Buttered Noodles and Vegetables

Serves: 4 servings
Ingredients
  • butter – 1/4 cup
  • onion – 1/2 cup chopped
  • broccoli – 3-4 cups chopped
  • black olives – 1/2 cup sliced
  • garlic – 4-4 cloves, chopped
  • dried basil – 1/2 teaspoon
  • ground nutmeg – pinch
  • kelp noodles – 12 oz. rinsed and cut up a bit
  • salt – to taste
Instructions
  1. In a large skillet, melt 1 T. butter. 2. Add the onions, broccoli, olives and mushrooms. Saute until onions are tender. 3. While the veggies are cooking; prepare the kelp noodles; drain them and place in a large microwave-safe bowl and cover with water. Microwave for 4-5 minutes. Set aside but do not drain yet. 4. Add the garlic, basil and nutmeg, along with another Tbsp. butter to the vegetables and saute for 2-3 minutes. 5. Now you can drain the kelp noodles in a colander (don’t rinse). Add them to the sauteing veggie mixture along with another Tbsp. or so of butter. 6. Saute for 5 minutes or so. 7. Salt to taste and add some more butter if you are so inclined; they are not called buttered noodles for nothing! 🙂
